So Easy Sopapillas

Anyone else but me go wild for sopapillas? To be honest, I haven’t had a real one in years. I usually eat tortilla chips and salsa for dessert when we go out for Mexican food. As a kid, my favorite Mexican restaurant was a little hole in the wall place that was as authentic as you could get.  It’s a family owned restaurant named Connie’s, and they just celebrated their 50th anniversary.  Clearly, they know how to do Mexican food right!  Since we’d just made our own easy sopapillas at home, we decided to order fried ice cream.

Well, I decided to order fried ice cream, with Doodle declaring it “gross” and asking to go to Braum’s instead.
